“Master” is the catch word in the culinary world. Embassy of Sweden organised a Master Class, a tasting session with Chef Ebbe Vollmer of Vollmers, a two Michelin starred restaurant in Malmo, Sweden at The Lodhi on 7th June, 2017 at 4:00 pm – 6:00 pm. We were invited for this fine event.
Chef Vollmer created some fine dishes using local ingredients as well as some elements that he had got along with him. The savoury Crispy potato cake topped with caviar was delightfully light and smooth on the tongue. The caviar was smooth and combined very well the deep fried julienne potato base. The vegetarian version had cucumber topping. Next came Lamb roast topped with smoked leeks. The lamb was cooked to perfection and the red wine sauce added softness as well as interesting flavours. But the best was perhaps kept for the last. The cream cheese mousse topped with sliced apples was a lightly sweetened dessert. Given its mildness, it was an anytime item.
