For us, avid travelers with a penchant for exploration, the joy lies not just in discovering new landscapes but in savouring the diverse flavors that grace our plates along the way. Our trysts with travel have often led us to the enchanting hills of Himachal, where each visit becomes an opportunity to delve into the heart of Himachali food.

A Culinary Trip to Himachal

Our love for travel and food recently led us on a unique journey to the hills of Himachal, without actually leaving Delhi. The enchanting experience unfolded at the Himachali Food Festival hosted by Novotel New Delhi Aerocity at their Food Exchange restaurant. As seasoned food and travel enthusiasts, we couldn’t resist the opportunity for a sneak peek, and our Sunday night dinner turned into a delightful adventure.

Siddu – The Flavors of Himachal

Dressed in traditional Himachal costumes, the Novotel staff welcomed us earing the iconic Kullu topi. Our culinary exploration began at the Siddu counter, featuring this steamed bread delicacy that we fondly remember from our Naggar trip. Novotel went above and beyond, offering a variety of Siddus with unique stuffings, including chicken, mutton, and a delectable walnut-based option for vegetarians. Served with lobia dal and vibrant red and green chutneys, the Siddu was a nostalgic and heartwarming treat.

Mouthwatering Indian Starters

They say a good start is half the battle won, and Novotel didn’t disappoint. The bhein ki tikki (lotus stem cutlets) and rhododendron seekh kebabs stole the show with their vibrant colors and explosive flavors. These starters set the stage for the gastronomic journey that awaited us.

Creating our own Himachali thali from the extensive buffet was an experience in itself. The flavorsome matar paneer madra, the unique mooli machli (fish with radish in a spicy gravy), ajwain arbi, saag chicken, and the aromatic veg and soya meat pulao turned our thali into a colorful representation of Himachal on a platter. For dessert, the apple halwa perfectly balanced the freshness of apples with the decadence of traditional Indian halwa.

A live counter offered home-style chapati, makki roti, aalu shimla mirch sabzi, and daal, giving us the comforting warmth of a home-cooked Indian meal.

The Luxurious Dinner Spread

Beyond the Himachali specialties, the regular buffet boasted an array of delights – from various momos, soups, and salads to Indian chaat and irresistible baked desserts. Our taste buds danced with joy as we savored every item laid out for this special occasion.

The Chefs Behind the Himachal Food Festival

Adding to the magic, Novotel brought in Himachali Chef Sherry, joined by Nidhi Sharma, a MasterChef India top contestant. Together, they crafted the enchanting flavors of Himachali cuisine, leaving us craving for more.
